Reset Your Bod Buddha Bowl Recipe

I love this recipe for this Buddha Bowl. It is clean eating at its finest and is super tasty too! Sometimes I throw a 1/2 a cup of quinoa white rice with it.
Ingredients
2 cups of Kale (nice hardy, green, leafy kale with stalks)
2 Cloves of Garlic (or more depending on your preference)
3 ouces of light firm tofu
2 teaspoons Extra Virgin Olive Oil
Put Kale in collander & wash thoroughly. Let it sit in the collander in the sink, do not dry it.
Cut tofu into long pieces & wrap in paper towels. Place a weighted object on top & allow to drain for about 30 minutes.
Slice garlic lenghwise into very thin slivers. If you are short on time, you can press the garlic.
Pour 1 teaspoon of olive oil into a frying pan and let it get hot. Turn the heat down to medium.
Toss the garlic in and sautee in the pan. Grind fresh pepper over olive oil and garlic and red pepper flakes for a little extra kick!
Keep an eye on the garlic ensuring you don't burn it. Once you get the garlic sauteeed, throw the kale in still wet. This will cook the kale but also steam it at the same time so the stalks aren't so tough.
Once kale is cooked, put it to the side.
Take the pan off the stove & add another teaspoon of olive oil. Heat the olive oil on medium to high heat and throw the cubed tofu in. Cook the tofu until it's crispy on each side.
I sometimes also like to throw a 1/4 of a cup of quinoa in with the dish (as seen in the photo).
