OPA!! Layered Greek Dip

I love hummus and as a vegetarian, it gives me a great dose of protein. It's super easy to make, but super delicious!
I hope you love it!
Easy Hummus
-Two 15 oz. cans of chickpeas/garbanzo beans
-1/3 cup of liquid from the can of chickpeas
-2 cloves of garlic finely minced or 1/2 teaspoon of garlic powder
-Juice from 1/2 lemon
-3 tablespoons of olive oil
-2 tablespoons of tahini
-1 teaspoon of salt
Mix all the ingredients in a food processor until the consistency is smooth. Yes, it’s that easy.
Ingredients to top hummus
-Feta Cheese
-Red Pepper
-Cucumber
-Calmata Olives
-Lemon
Spread hummus about a 1/2 inch to an inch thick over a platter. Top with feta cheese.
Next, dice the pepper, cucumber and olives and spread them over the hummus & feta.
Squeeze juice from 1/2 a lemon over the dip.
Serve with crackers (preferably gluten free!) Seen here with Glutino bagel chips.
